The summer season is chicken salad sandwich season. I have a house full of lunch packers and having a prepared chicken salad in the fridge ready to go during the week is a game-changer. I’ve played with a few other recipes but this is the best healthy chicken salad recipe in my house. The crunchy grapes and celery, the creamy chicken salad, and fresh dill all together between your favorite bread is a crowd-pleaser every time. INGREDIENTS
- 1 lb Shredded Chicken Breast
- 1/2 c Halved Red Seedless Grapes
- 1/4 c Chopped Celery
- 1 c Mayo or Plain Greek Yogurt
- 1 tbsp Mustard
- 1 tbsp Fresh Chopped Dill
- 1 tsp Salt
- 1 tsp Pepper
DIRECTIONS
- Boil and shred the chicken breast.
- Combine all ingredients in any order.
- Stir and enjoy! You can eat this immediately or store in an airtight container for up to 4 days.
